To store live oysters safely and keep them fresh, follow these key steps:
How to Store Live Oysters (in the Shell)
1. Keep Them Cool (But Not Frozen)
Ideal Temperature: 35–40°F (1.5–4°C)
Use a refrigerator—never a freezer.
2. Store in a Breathable Container
Place oysters in a bowl, tray, or open container.
Cover loosely with a damp cloth or paper towels to maintain humidity.
Never store in a sealed plastic bag or airtight container—they need air to stay alive.
3. Do Not Submerge in Water or Ice
Freshwater or melted ice will kill them.
If using ice for cooling, place it in a sealed bag above the oysters, not directly on them.
4. Positioning Matters
Store cupped side down (flat side up) to retain natural juices inside the shell.
5. Check for Freshness
Tap open shells. If they don’t close, the oyster is dead—discard it.
6. Use Within a Few Days
Best eaten within 1–3 days, though healthy oysters can survive up to 7 days under proper storage.
What Not to Do:
Don’t wash oysters before storing.
Don’t store near strong-smelling foods (oysters can absorb odors).
Don’t stack them too tightly (they need air circulation).
