For Live Oysters (in the Shell)
1.Keep Them Cold (but not frozen)
Store oysters at 35–40°F (1.5–4°C).
Use a refrigerator, not the freezer.
2.Place in an Open Container
Use a bowl or tray.
Cover loosely with a damp cloth or paper towel (never seal them in an airtight container—they need to breathe).
3.Do Not Submerge in Water
Freshwater kills oysters. Keep them dry.
4.Check for Life
Tap any open shells. If they don’t close, the oyster is dead—discard it.
5.Use Within a Week (Preferably 1–3 Days)
The fresher, the better. They can survive up to 7 days if stored well, but best flavor is within a few days.
